Healthy Eating!!

So, I love finding new recipes to cook! As a matter of fact...if any of you have a great, random recipe...please feel free to leave me one!

A new friend of mine out here in Arizona told me about this iPhone app a few months ago, but it wasn't until last week when my husband reminded me about it that I downloaded it! It's the Whole Foods app! You can search recipes based on special dietary needs, certain types of food (chicken, beef, grains, etc.) and you can even say that you are shopping on a budget!!! It is just a useful tool I thought I'd share with all of you!

Pumpkin Pumpkin Pumpkin

So I am obsessed with this time of the year...FALL!!! YEA...it's finally here! For the most part the only reason I am so obsessed with it, is because I enjoy anything pumpkin flavored!

Repost: Mustard Roasted Fish

Hi All!

I know it's been a bit since my last post, but I have a good one for you today! hehe! I have a GREAT recipe for an amazing dinner!! I stole this recipe off of my friend Catherine Jager's blog! She always has something amazing for me to try! Check out her blog for great & different dinner ideas! All you need is 25 minutes and the following ingredients: Red Snapper, Creme Fraiche, Dijon Mustard, Capers, Shallot and Ground Mustard!


4 (8-ounce) fish fillets such as red snapper
Kosher salt and freshly ground black pepper
8 ounces crème fraîche
3 tablespoons Dijon mustard
1 tablespoon whole-grain Dijon mustard
2 tablespoons minced shallots
2 teaspoons drained capers

1. Preheat the oven to 425 degrees.



2. Line a sheet pan with parchment paper. (You can also use an ovenproof baking dish.) Place the fish fillets skin side down on the sheet pan. Sprinkle generously with salt and pepper.

3. Combine the crème fraîche, two mustards, shallots, capers, 1 teaspoon salt, and 1/2 teaspoon pepper in a small bowl. Spoon the sauce evenly over the fish fillets, making sure the fish is completely covered. Bake for 10 to 15 minutes, depending on the thickness of the fish, until it's barely done. (The fish will flake easily at the thickest part when it's done.) Be sure not to overcook it! Serve hot or at room temperature with the sauce from the pan spooned over the top.

Family, Friends, Fun and Food!

I hope all of you are having a wonderful holiday season! Jeff and I had a great time with both of our families last week! We have been truly blessed to have found each other and the love that God had planned for us before we were even in each of our mother's womb.

We are looking forward to an exciting and eventful new year! There are lots of things planned already! My best friend, Monica and her fiance are getting married on February 14th in Friendswood, TX (Houston area)! Then exactly one month later on March 14th our other friend Bryan and his fiance Jenny are getting married in Ft. Worth, TX! I'm having my Dallas Bridal Shower on March 15th, but don't have a date for my West Coast Bridal Shower yet and then Jeff and I are getting married on May 16th!! I can't wait! All of that happens within the first 6 months of the year! I have no idea what the second half of the year holds, but I am so excited to see what the Lord has in store for our life as husband and wife!


So, on to a different topic...some of you may know that I love to cook! If I didn't go to school for fashion I was going to go to culinary! I chose fashion, so I didn't turn into a fat blob! Anyway, I have a friend named Catherine Jagers
and whenever I need a good idea for dinner I go to her blog!! Yesterday I was reading through her recipes and I knew I wasn't going to have the energy to make anything too involved, so I found the recipe for the Los Cabos Salad from Taco Diner in Dallas! Ohhhh...it was yummy! Try it and ENJOY!!!


Los Cabos Salad
Ingredients:
1 avocado
1/2 head of iceberg lettuce
1 shallot
1/2 lime
bacon (I use turkey bacon and cook it extra crispy!)
kosher salt
(serves 2)

Cook bacon over low/medium heat.
While bacon is cooking:
Chop lettuce into 1/2 inch pieces and place in medium bowl.
Slice avocado directly on top of lettuce.
Finely chop shallot and add to lettuce/avocado.
Start 'mushing'.
Add salt and lime juice and give one final stir.
Serve with bacon crumbles on top.

Weekend of Favorites!

So Friday night after Jeff and I got off work, we met at home and did some things to clean up a little bit! Then we headed to Gyu KaKu for happy hour! This is by far our FAVORITE spot for happy hour!! We get to cook our food the way we like it, have some Japanese Beer and at the end of our meal our bill is only like $20 TOTAL!!! It's not very often you can eat for $10 a person! After our little happy hour dinner we went to see "Nick and Nora's Infinite Playlist". We got there right as the movie was starting and as the movie ended and the lights came on...we realized we had just sat in a theatre with not one person over the age of 14 and Jeff was the only male! Hehe! It was a cute movie though!

On Saturday morning, Jeff went to work and I went for a bike ride. I ended up at Starbucks where I made conversation with an elder who had a sweet little lab-dachshund mix puppy...the dog's name was Sarah and you could tell she loved her mom and I could tell by our conversation that the mom really loved Sarah's company. That was all she talked about for the 30 minute conversation we had. She told me how Sarah only goes potty where she is suppose to, how she doesn't bark just to bark and how much Sarah keeps her company. I was happy to see that this sweet and lonely woman had a precious dog that keeps her happy every day! When she was ready to head out on the rest of her errands, I hopped on the bike and headed back home to do some sit ups and push ups. As I was doing my push ups...I happened to look up to my bookshelf and I realized that I had the Nicholas Sparks book "Nights in Rodanthe". I grabbed it as I was getting back on the ball for more sit ups and I started reading it...I couldn't put it down!!! I stopped to take a shower and make some lunch, by the time Jeff came home and it was time to make dinner, I had read about 8 or 9 chapters. I fell asleep reading it and woke up Sunday morning and finished reading it! Ahhhh...what an amazing book! For those of you who know me know that I HATE to ready, but after page 1 of this book I was addicted! Nicholas Sparks does that to me for some reason! He is my FAVORITE! The first book I read from cover to cover without ANY interruptions was "A Walk To Remember"...then I saw the movie! Unfortunately I saw "The Notebook" before I could read it, so I knew I would never read it. I was lucky that the theatre Jeff and I went to on Friday night wasn't showing "Nights in Rodanthe" or else I never would have read the book. If anybody has any "easy read's" feel free to update me! I need as much push as I can get to read some good books!


Sunday, I had the biggest headache from reading all weekend without my glasses, so my mom and I headed to the mall where the massage people have their chairs set up in the middle of the mall (they give the best shoulder massages)! We both had 25 minute massages, and headed to my FAVORITE store...Williams Sanoma! It smelled so good in there! We love it when it's almost the holiday's and they have all the holiday goodies in there! We started with some non-holiday Catalina Red Pepper Pasta Sauce and decided to make pasta for dinner! Then they also had the Pumpkin Spice Pecan Bread Mix, that I could NOT resist! And I know we are like a month and a few days early, but they had Harvest Bread Turkey Stuffing with Pecans and Cranberries! We couldn't resist! We bought it all!

All in all, I had a wonderful weekend! I have a great family and a great fiance!!! P. S. I can't wait to get married! Jeff is my dream come true! I have been blessed with all of my FAVORITES!!!!
